Hard Cider

The following method is one of concentration (called 'freeze concentration', 'fractional freezing', 'freeze distillation', or 'jacking'), which may be used for increasing the ABV of an alcoholic beverage, such as hard cider.

Pour hard cider into a container (such as a glass bottle, that has a flip top lid, straight sides, and no shoulders), leaving at least one inch of space at the top of the container. Close but do not tighten the lid, then place the container in a freezer. Allow hard cider to freeze until about 25% of the hard cider is frozen solid. Remove the container from the freezer, then strain out the ice and pour the liquid hard cider into another container.

Applejack should have an ABV of 15-55%. Flash Point Readings may be used for determining the ABV of applejack. A sample of applejack that burns when it is heated to a flash point of 75°F and ignited for example, has an ABV of 50%. To increase the ABV of hard cider more, repeat this method of concentration. To reduce the ABV of hard cider, add water.
